Perfect Blueberry Muffins

After testing all of the highest rated blueberry muffin recipes on the internet, we decided to make our own. We can confidently say that this is the best blueberry muffin recipe.
These muffins have a moist, flavorful batter with blueberries evenly spread throughout the muffin, with a nice crispy top.

Ingredients

  • 2 Cups All Purpose Flour
  • 3/4 Tsp Salt
  • 2 Tsp Baking Powder
  • 3/4 Cup Sugar
  • 1 Stick Butter Room temperature
  • 2 Large Eggs
  • 1 1/2 Tsp Vanilla Extract
  • 1/4 Tsp Almond Extract
  • 1 Tsp Lemon Zest chopped
  • 1 Cups Milk
  • 2 Cups Fresh Blueberries Rinsed and picked over

Instructions

  • Preheat oven to 375 degrees.
  • In a medium bowl, whisk together flour, salt, and baking powder.
  • In a separate medium bowl, mix together sugar and butter.
  • Add eggs to sugar and butter mixture. Stir each egg in separately.
  • Add vanilla extract, almond extract, and lemon zest. The batter may look slightly grainy, that is okay.
  • Combine dry ingredients into wet ingredient mixture, alternating with milk.
  • Fold in blueberries, do not over mix.
  • Line muffin tins with paper cups. Spray cups and tin with cooking spray.
  • Fill cups to the top with batter.
  • Sprinkle additional Tbsp of sugar over top of the batter.
  • Bake for 30-35 minutes, until golden brown
  • Remove from oven and allow to cool for ten minutes before serving.

These muffins turn out perfectly moist and flavorful – getting much of their sweetness from lemon zest rather than just adding more sugar. We highly suggest cooking this recipe as-is, without any modifications. Use fresh blueberries if you can, but if not then frozen is fine.
