Preheat oven to 375 degrees.
In a medium bowl, whisk together flour, salt, and baking powder.
In a separate medium bowl, mix together sugar and butter.
Add eggs to sugar and butter mixture. Stir each egg in separately.
Add vanilla extract, almond extract, and lemon zest. The batter may look slightly grainy, that is okay.
Combine dry ingredients into wet ingredient mixture, alternating with milk.
Fold in blueberries, do not over mix.
Line muffin tins with paper cups. Spray cups and tin with cooking spray.
Fill cups to the top with batter.
Sprinkle additional Tbsp of sugar over top of the batter.
Bake for 30-35 minutes, until golden brown
Remove from oven and allow to cool for ten minutes before serving.
