Thanksgiving Brussels Sprout Crostini

These brussels sprout crostinis with honey-balsamic and goat cheese are the perfect Thanksgiving appetizer.

Ingredients

  • 1 lb brussels sprouts Small to medium sized
  • 1 cup balsamic vinegar
  • 4 tbsp honey
  • 4 tbsp olive oil
  • 4 oz goat cheese
  • 1 baguette
  • Salt & Pepper to taste

Instructions

  • Prehead over to 425F
  • Slice brussels sprouts in half, remove stem and outer leaves, wash thoroughly
  • Toss sprout halves in 2 tbsp of olive oil
  • Place cut side up on baking sheet
  • Generously season with salt and pepper
  • Bake 15-20 minutes or until extra crispy

Honey Balsamic Reduction

  • In a small saucepan bring balsamic vinegar and honey to a low simmer
  • Stir continuously for 5-8 minutes to keep sugars from burning (keep on heat longer for thicker drizzle)
  • Remove from head and allow to cool before serving

Crostini

  • Thinly slice baguette on a bias
  • Lightly brush both sides with remaining olive oil
  • Broil until lightly crispy, 2-4 minutes (don’t over cook or you’ll have croutons)

Assembly

  • Smear a dollop of goat cheese on each crostini
  • With tongs or kitchen tweezers place 2-3 brussels sprouts on each crostini
  • Finish with a healthy drizzle of honey balsamic reduction and flakey salt (optional)
  • Serve immediately
