The Best Scrambled Eggs

Ingredients

  • 4 Eggs
  • 2 tbsp Heavy cream can be replaced with milk for a less creamy product
  • 2 tbsp Unsalted butter
  • 1/8-1/4 tsp Salt (to taste) If using sea salt use less

Instructions

  • Whisk eggs together in a large bowl until completely combined. At least 30 seconds.
  • Whisk in salt and heavy cream.
  • In a non-stick pan over a medium-low flame melt 1 Tbsp of butter.
  • Once the butter is melted and slightly bubbly pour in eggs.
  • With a silicon spatula gently fold the eggs towards the middle. Stir frequently until eggs begin to firm up.
  • Once curds begin to form slow stirring to allow larger curds to form. Fold into the middle and allowing liquid to run to the edges.
  • Add final Tbsp of butter once the eggs are mostly cooked.
  • Turn off the heat once the butter has been folded into the eggs. The eggs will continue to cook once off the heat so transfer to a plate promptly.
  • Serve and enjoy immediately.

Notes

We highly recommend using a whisk instead of a fork as it will be much easier to vigorously combine eggs. Ideally your eggs should be all one color with little to no separation.
